Yeah, I said caramel apple pizza. Don't turn your noses up, it's not what you think - there's no tomato sauce involved, although there is some cheese.
Ok, here's what you need:
8oz cream cheese (one whole block of Philly or Cooper will do)
1/3 cup caramel apple dip (can be found in the refrigerated section of the produce department)
1 14oz pizza crust (Boboli or some other brand; any kind of pre-baked crust will do)
2 large apples (I prefer a Gala, Jonagold, Jonathon or Granny Smith; something a wee bit tart), cored and thinly sliced
2tbsp sugar
1/4 tsp cinnamon
1/3 cup coarsely shopped salted cashews (or any other salted nut of your choice)
another 1/4 cup caramel apple dip
Now, here's how you put it together:
Heat the oven to 350 degrees.
Combine the cream cheese and 1/3 cup dip until well blended. Spread on pizza crust to within 1" of edge.
Toss the sliced apples with the sugar and cinnamon until evenly coated. Lay slices evenly on the cheese -y crust (I start mine on the outside and work inwards until all the crust/cheese is covered).
Sprinkle the nuts over the top, then drizzle the remaining caramel dip over the top of the whole thing.
Bake in the preheated oven for 18-20 minutes, or until the apples are tender.
Serve warm.
I made this yesterday, and it disappeared in under an hour. Considering we have 2 picky vegetarians and a husband who doesn't like anything I make living in this house, that's pretty remarkable. This recipe is a keeper, imo.
